A recent and still experimental method, carbonic maceration involves fermenting coffee cherries in hermetically sealed barrels saturated with carbon dioxide. The result gives beans a strong taste of tropical or red fruit, and this lot from El Salvador is no exception: rich tropical flavours, rich cherry notes, almost vinous, and the sweetness of chocolate. Finca Noruega is part of the Los Naranjos group, created by a group of friends with a passion for coffee. The farm is part of the Renacer ('Rebirth' in Spanish) programme, a technical field school and training programme for coffee producers to teach them better farm management practices. The technical field teams help farmers apply these practices to maintain the fertility of the soil and the environment, while striving to improve the yield and quality of their coffee.
