Anaerobic fermentation is a method of processing coffee that involves fermenting it in sealed pressurised tanks deprived of oxygen. In this controlled environment, the coffee mutates and develops unique flavours. Here we find very fruity notes of black cherry, citrus and red wine, for a rich, textured and generous coffee (like the aforementioned red wine).
On the volcanic slopes of Mount Ijen in East Java, coffee has been grown for generations. Several varieties are used, and the farmers harvest the cherries by hand to select only the ripest fruit. This meticulous selection process, which is repeated at the processing station, and the region's unique terroir guarantee a speciality coffee of exceptional quality.
